Sodium nitrite is most commonly used as a stabilizer and additive in the food industry. It has antibacterial effects and can inhibit the growth of harmful pathogens and pathogenic bacteria. In addition to food processing, sodium nitrite also has certain uses in the medical field. The American Heart, Lung, and Blood Association has found that low concentrations of sodium nitrite can be used to treat diseases. A report from the National Academy of Sciences in the United States claims that long-term low-dose use of sodium nitrite can repair blood circulation in the hind limbs of rats. The study also suggests that a combination of low-level dietary sodium nitrite and sodium nitrate can treat cardiovascular disease by strengthening or repairing damaged blood vessels.
Pigments and dyes
Sodium nitrite is also used as a bleaching agent and dye. It can be used to produce alkaline dyes, acidic dyes, direct dyes, sulfide dyes, diazo and azo dyes. Sodium nitrite dyes can irritate the respiratory system, eyes, and skin, so caution should be exercised during operation. Ingestion of this compound can cause poisoning, and heating it together with flammable materials can lead to explosion accidents.
Sodium nitrite is an inorganic salt derived from nitrous acid, appearing as a crystalline powder that dissolves readily in water. It functions as a preservative, color enhancer, and chemical reagent in food and industrial contexts.

While not typically certified organic, low-level use in natural formulations is possible if compliant with regional standards; alternatives like celery powder provide nitrite-derived effects for organic labeling.
Sodium nitrite (NaNO₂) offers faster antimicrobial action for curing, while sodium nitrate (NaNO₃) converts to nitrite in meat, providing longer-term preservation; both are used synergistically in foods.
It can contribute to nitrate pollution if mishandled in wastewater, but proper dosing in treatments minimizes eutrophication risks, supporting sustainable industrial practices.
